Cheese

A classic mozzarella pie, but with the unmistakeable stamp of Seattle: a bit of Beecher’s Flagship, and topped off with King’s handmade burrata.  Who would have thought that Seattle cheesemakers held the secret to unlock the full potential of the ‘plain’ cheese pie?  This is the only pizza you need, the rest are just for show.

Pepperoni

Pepperoni not as it is, but as it should be.  Cheese pizza adorned with some of most exquisite acorn-fed cured pork in the world, kissed with hot honey.  It doesn’t get much better than this.

Tomato

The Italians have long known that a pizza does not need cheese to be great. This vegan pie has an intense tomato flavor, with garlic and fresh herb, and is liberally splashed with Oregon’s finest olive oil.  The perfection of simplicity.  The most underrated pie. 

Lemon Ricotta

Fresh lemons sliced paper thin, house-made ricotta, garlic, topped with fresh parsley and a generous drizzle of honey on a sesame seed-studded crust.  Who would have thought that a pizza without tomato could be better than one with?  The most unique and the most refreshing.

Mushroom

Morel mushrooms: the poor man’s truffle.  No tomatoes, just garlic, olive oil, cheese, herbs, Oregon sea salt and morel — the only mushroom that truly belongs on a pizza. You will never find anything with this much earthy, garlicky, umami flavor.

Sausage Onion

Juicy, tender, house-made pork sausage, paper-thin red onions and pecorino cheese over a moderately spicy Calabrian pepper sauce.  A riot in the mouth.
